National Picnic Month: Think Beyond the Sandwich

Did you know that July is the UK’s official National Picnic Month? It is exceptionally easy to celebrate, all you have to do is get outside into the world and enjoy all the wonderful sights and smells it has to offer. It’s the perfect time to create memories – so get your family and friends together at a nearby park and bring your favourite foods that can be eaten for a picnic! Anything that can be served cold or at room temperature definitely has picnic potential, but why not switch it up this year and think beyond the sandwich?

If you think that chicken makes a protein, try these two delicious and easy to prepare Grabits Chicken on a Stick recipes that you can prepare in advance and enjoy on a picnic this month!

 

  1. Bright & Vibrant Chicken Salad

1.	Bright & Vibrant Chicken Salad

Serves 1

Prep and cooking time: 15 mins

Ingredients

Grabits Original Chicken on a Stick

½ pack microwave quinoa mix, cooked to the instructions on the bag

100g baby corn

100g mange tu

½ carrot, peeled to make ribbons

Small handful of cashew nuts

Method

Boil the mange tu and corn in a pan for 2-3 minutes until al dente, then drain and add to the cooked quinoa. Place the carrot ribbons on top, remove the Grabits original chicken from the stick and add that to the other ingredients. Finally, sprinkle on the cashew nuts and serve.

 

  1. Chicken Lettuce Wraps

Chicken Lettuce Wraps

Serves 1

Prep and cooking time: 15 minutes

Ingredients

Grabits Nice & Spicy Chicken on a Stick

3 baby gem lettuce leaves

½ chilli, sliced

1 spring onion, sliced

2 radishes, sliced

50g pineapple, chopped into small chunks

Method

Pull the bigger leaves off the baby gem lettuce to form the base to your ‘wrap’, wash them and cut off the ends. Share the chilli, spring onions, radishes and pineapple chunks evenly between the three leaves and place them on the leaves. Remove the Grabits Nice & Spicy Chicken from its stick and cut into small chunks, add that to the wraps too. Then simply fold the leaves around the ingredients in a ‘wrap’ style and enjoy!
